I was wondering if I should be designing with a grid anytime I work on a project? Or will it be fine not to as long as I have proper spacing,margins,etc?
It depends on your preference really. As long as everything is aligned properly, you would not need margins.
I use margins when I need something to be perfectly aligned. They are very useful for achieving precision in design.

Agreed. I don’t always use them because sometimes they get in the way and it’s too much for me to take in visually! 
Most of the programs I use have alignment tools so I just select things and line them up that way 
But it depends on how you want to do it.
